The place is absolutely out of the ordinary. Details are all neat and create a very special atmosphere.
Food is good but the great part is the kitchen: just in the middle of the room, no smell at all, no noise, just good food.
Worthwhile to try.

It's not necessarily easy to find excellent food in Italy. But 10 minutes outside the city center of Bologna, located inside a national park, behind a security gate and on the basement floor of a fairly non-descript building there is a chef who is cooking his heart out.

Sale in Zucca is run by a young couple, the wife handling front of house and the husband behind the stoves. They are upbeat, cordial and very attentive. Because they promote a 0km rule where all of the food you eat comes from within the park's limits, the chef is on hand to describe each dish.

Know that you will arrive to a degustation. We paid 28EUR per person not including wine. We enjoyed three small starters, two grains and one meat dish followed by dessert. It is not overwhelming in amount, each dish is just enough to leave you wanting more, but not too little to feel insignificant.

The food itself is incredibly innovative. Expect a new take on traditional Bolognese fare as well as surprising combinations of ingredients. The menu changes every week, so I had the impression that each new menu is an experimentation. It would be hard not to return often if we did not live an 8hr drive from Bologna!

The location is the restaurant's weakest point, but honestly I care much less about ambience when the personalities and food provide the warmth. The restaurant is located in a new constructed building resembling a community center. The dining space is essentially a cafeteria as the kitchen is literally next to you. Do not expect much from the environment.

In addition, one must sign up for a one year membership in the association in which the restaurant resides. This is a 2 minute signature and costs nothing. You will receive a card so that it is only necessary once per year. A minor point.

Highly recommended. Especially for tourists who are wary of the usual restauranteurs who serve up mediocre food because us English speakers aren't supposed to know better. Here you are treated as a true partner in the experience of great food.

I expect that after a few years of refinement, this couple can go and open an amazing restaurant in a beautiful location to suit the quality of food.
