We stumbled on this unpretentious eatery to have a quick lunch when visiting Salusse (Saluzzo), and we spent two hours there, instead. Service was actually pretty quick, it's just that each time we finished something we couldn't resist ordering something else, as it all looked delicious. And it was! You won't find Italian dishes (e.g. pizza, spaghetti bolognaise): they stick to traditional Piedmontese cuisine, beautifully executed and including some less frequent fare. Apparently they change the menu every day, and when we went we had treats like mocëtta (the Piedmont equivalent to Swiss Grisons dried meat and Lombard bresaola) and hare civet. The cheese board is HUGE, with over two dozen cheeses from within 50km or so. When I ordered most of it the bearded waiter got watery eyes. If you order wine they bring you a big open bottle, when you check out you tell them how many glasses you had. Last but not least, the bill was incredibly moderate, even for provincial Piedmont standards.

Nous sommes tombés dans ce bistrot très informel pour casser la croûte vite fait durant notre visite de Saluces/Salusse (Saluzzo), et nous y sommes restés 2h, car après chaque plat nous nous sommes laissés tenter par le suivant. Pas de plats italiens ici (pizza, pâtes bolognaise), la cuisine est rigoureusement piémontaise et très soignée, avec des belles curiosités. Ils changent la carte tous les jours, et nous avons eu droit à la mocëtta (la viande des Grisons d'ici) et à un civet de lièvre. Le plateau de fromages est IMMENSE, avec plus de 20 fromages tous produits dans un rayon de 50km. Quand j'en ai commandé la plupart, le serveur barbu était ému du compliment implicite. Côte vins, ils amènent les bouteilles ouvertes, en réglant à la caisse ils vous demandent combien de verres vous avez bu. Prix très raisonnable, même pour les niveaux de la province piémontaise.

This restaurant is one of the reasons to go to Saluzzo.
Excellent, honnest local food. And a very nice ambiance. You can also try different wines with different plates at rather low prices.
So what do you want more: excellent food, nice wines, good service and this at a rather low price.
