As a customer of Fattoria La Vialla we always try to visit them and enjoy the outstanding lunch. It is always a highlight of our holiday in Italy. The total concept is unique and a great example of biodynamic food and wine production. The passion of the staff is incredible and should be an example for many other industries and services.
In short it is an absolute must to visit and experience the Fattoria La Vialla when in the Arezzo neighborhood.

Pasta sauce was absolutely full of hard tomato skin and that made it weirdly inedible; both jars the same issue.
The pasta actually dissolved in the pan before the cooking time was up. Ghastly.
The wine was mediocre.
The crackers were like corrugated iron and were so hard we dare not eat them; just the worst ever.
Olive oil and Balsamic vinegar was OK.
Overall a pretty unpleasant experience.
As an ardent fan of Italian cooking, and a contributor to a number one best selling cook book, I find it hard to believe that anyone would serve up this dreadful food.
My speciality is Italian; you always leave the tomato peel out and use chopped peeled tomatoes and/or passata.

we're very sorry for your negative review. 1 star is serious and not truthful. We would like to respond point by point to your criticism:
Regarding the tomato skins , we have many different kinds of sauces, with and without skins, just choose to your liking. (The recipes with tomato skins faithfully respect the Tuscan tradition. )
As for the pasta, it's the first time we've received such a criticism, it generally cooks to perfection if the correct cooking time is observed. Anyway, we do guarantee replacement for any problem. But you didn't write directly to us , you limited yourself to an anonymous public criticism on Tripadvisor.
Was the wine mediocre? Matter of taste.
Your criticism of the wine does not say anything concrete, so it is not acceptable, and nothing detracts from the widespread appreciation of the wines of Fattoria La Vialla...
Our crackers are thought of to be used together with sauces or fresh tomatoes, similar to bruschetta. They must be crunchy but also capable of holding liquids without getting soggy.

La Vialla is a centre of excellence for wines & foods, biodynamic & beautifully presented. The heart of the Fattoria has a winery, oil processing, cheese making, vinegar making, an amazing museum of historical artefacts, a cantina, a shop, & a delightfully helpful staff (excellent English!). See them making the bread, biscuits & sauces, walk around the olive groves and vineyards, eat a lunch derived from the products, then buy to take home. I loved pretty well everything we tasted, & they will take an order & ship it all home for you, just as well if you are in Italy by air. You can only get their things here or by mail/online.
The surrounding countryside is lovely, and there are properties belonging to La Vialla to stay in too.
We've been buying Fattoria La Vialla's organic food and wine for years and this was our first visit (along with our dog). It's difficult to book (the Germans appear to have the drop on the Brits and there are only 110 beds in glorious old and beautifully refurbished farmhouses across the estate, all fully booked) but we managed it this year. Our accommodation was deep in the forest, nearly 5 miles from the main farmhouse complex along steep, winding, rutted tracks (over an hour and a half walk or some 20 minutes by car) and so was marvellously peaceful with magnificent views. The farmhouse was very comfortable and clean, furnished in an old fashioned, bucolic way, and with everything in excellent condition. The get-you-in pack was characteristic of their products and lovely. Our stay was perfect: the staff, products and service were all outstanding and the place, along with its food and wine, was a delight. We will undoubtedly try to return.
