There is a very elegant restaurant -- Hostaria San Lorenzo -- associated with an eponymous hotel. The food was very sophisticated and unique. The restaurant is set amidst some very interesting Roman ruins. Unfortunately, our table was in the middle of the restaurant, so we could not really appreciate the ruins.
Note: this is not a restaurant that serves Italian food. Rather, it serves very unique, very sophisticated dishes.
