In 1997 he founded the iconic Salamanca district of Madrid a Tavern Madrilena with a twist: offers lunches, throughout the year, such as menu and unique dish, the authentic Cooked Madrid. Served in three rollovers, in free bar, homemade desserts really and truly balanced wine list make Casa Carola is established as a very young classic in Madrid dining scene. The service is friendly and very nice family atmosphere. Prebooked because, due to their small size, capacity is completed with ease. Casa Carola is an essential reminder of the kitchen (and the Cooked Madrid) that was cooked at home at the time of pot.

I know this restaurant for a long time and it's just amazing. Good Spanish typical food, specially cocido madrileño and the Spanish wines. Totally recommended.

I went with a friend on Sunday, when they serve everyone 'cocido madrileño', the traditional Madrid-style stew. It was quite good! I'd had it before in other restaurants and enjoyed this one very much. Despite it being a very hearty meal, I found the flavors delicate. I definitely recommend coming here. It's located in the north of the chic neighborhood of Salamanca. The service was great, from start to finish. The ambience is very traditional. Because it was a Sunday, there were many families encompassing several generations, all enjoying their cocido.

We wanted to try some traditional Spanish food while we were in Madrid - and this restaurant was definitely a good choice for that!

Cocido is essentially when lots of meat and vegetables are cooked together for a long time to make a big stock. The stock is separated and you get two meals:
1) Soup - with the stock and added fideos (a really thin noodle) - which is delicious
2) Everything else - they then bring out all the tender meats, chickpeas and lots of other vegetables (including cabbage/carrots/leek)

It was a really hearty meal which I would say is the equivalent to an English roast - and we were super full!

We also got a glass of Cava, croquettes and desert of our choice included in the price per person!

The restaurant was very welcoming - and we knew it was a good sign when there was only the Spanish locals enjoying a meal there - would highly recommend if you want to eat something local.

This was recommended to us by friends from Madrid. Perhaps it just wasn't something we were used to; but we did not find the meal to be very enjoyable. The croquette to start the meal was quite good, and the soup decent; however, the main part of the meal was somewhat bland in favor.
