Il Bosco Delle Galline Volanti (The Wood of the Flying Hens) is newly opened on the edge of the parking lot at the edge of the small town of Barolo. The young owners are enthusiastic about explaining that they are sourcing their food and wine from a small number of farms and vineyards in the immediate region - local and sustainable, which in Italy is often referred to as zero kilometre.
We were in for lunch, and shared a fennel salad (both raw and cooked) with greens, and a dish with a variety of mixed fried veggies.
Glasses of local white Arneis wine.
