Our lunch was a slow food delight. No rushing, no fast food, no factory made, only custom grown, seasonally prepared and served with care. I only wish I could eat like this in the US. All the places we ate in Piemonte were exceptional. They are the best chef/cooks in all of Italy in my opinion. It is good that they are reluctant to become commercialized, the art and craft would suffer as would the clientele. I will bring my grandchildren here to make sure they gain the knowledge of what is really superior.
