Memory is the key. Many times I said “this tastes of sea”...it is clear now, after having tasted “Scala dei Turchi” by Chef Pino Cuttaia, that I had the whole sea in my plate and not only a mere taste of it. It reminded me when I was a kid spending 3 months dipping from the reefs and fishing on my father’s small boat. If you love sea, you have to try this dish and taste the sea.

We drove almost 3 hours from Taormina just to experience this unique place. 3 of us picked their Illusion set menu (6-7 small absolutely unique and delicious dishes). If I remember correctly it was 130 euros per person but we left speechless and happy.

What is the La Madia restaurant? The la madia restaurant is definitely Pino Cuttaia! Why? Because in every dish "beyond the quality, experience, technique and respect for the raw material" you savor memories, emotions, which not only lead you to rediscover an exaltation of simplicity that you have long forgotten, but you discover the great Heart and sensitivity in every course of a great and unique chef! We went for lunch at La Madia and selected the 170 tasting menu. The experience was interesting, however at points we felt confused. The restaurant has very limited English which made booking over the phone a struggle. The booking system isn’t that transparent, one of the days was marked as unavailable but once we called and asked in our very limited Italian they had seatings for lunch. Despite the language barrier, it was clear to us that the chef Pino Cuttaia is committed and aims to tell a story through each dish. He spoke to us (non Italian speakers) which we appreciated. The food: we were very impressed with the starting dishes, however as the meal progressed we felt a bit disappointed. It felt that the staff weren’t that interested in welcoming us, despite our excitement. In hand this made us feel a bit detached and that us being there wasn’t that important to them. The deserts we selected were a big let down. The Zabaglione con Gelato al Marsa was a huge portion. We felt The Cannolo which was no different from what you buy in a Sicilian bakery. I could see the story and the reference to Pino’s roots, however we felt the dishes just presented good technique and showiness - that would tick off all the cookery school boxes. It lacked the heart and flavour that makes the food you eat at a Michelin star a special experience. We felt the little details were cared about in certain areas, however the interior was a let down and not tasteful, such as quotes on the wall and out dated crockery. In our opinion, this didn’t stand up to other 2*s or some 1*’s we’ve been too in Europe. I think La Madia gets it right in some areas, but lacks the drive to elevate itself in the restaurant scene. For the area and town it’s a respectable restaurant, however in the grand scheme of things it isn’t what we’d regard a 2* to be. It’s clearly a restaurant rooted in love for food but unfortunately has no wow factor.

Being used to Michelin-starred tables, we took advantage of a stay in Sicily to test this restaurant freshly starred this year in Licata. I had to take a little time before making this comment because I have to admit that I was a little confused about my feelings. First of all, the restaurant environment is not necessarily the most welcoming ... once I walked through the front door (where you will have to ring for someone to open you), I felt reassured. The decor is modern and worthy of this type of establishment. The chef, who is very friendly, friendly and pleasant, comes to take the order of your choice of Menu. All other dishes for me are more than 1 star. Service is smiling and Leader. The wine pairing is a little special but let’s pass. For main dessert we had a scoop of ice cream with a brioche cut in 2. A scoop of ice cream in a 2-star restaurant?WTF (sorry) this must be the best scoop of ice cream of your life so?!?...no it’s just a scoop of ice cream with a brioche ... In conclusion, this restaurant is good (I would give it a Rating of 3.5/5 but it doesn’t exist ) but it’s clearly not up to a 2 Michelin star for me and therefore the Award Value, which on paper could have been good, is not so good anymore.

We decided to treat ourselves to a special dinner at La Madia di Pino Cuttaia, opting for the tasting menu. The staff was extremely kind and considerate, making the atmosphere welcoming and pleasant. we had dinner at the excellent Pino Cuttaia in August 2024 while on vacation at a nearby Resort. we really love to taste and enjoy Italian excellence when we visit new places: my husband while booking the holiday, immediately looks at which restaurants to try. Thanks to Chef Pino Cuttaia and his staff for making us spend a sublime evening full of emotions, with dishes that are difficult to describe in words, but which make you say for each one: I haven't eaten anything tastier in my entire life! The chef studies the route together with you, and it can only be perfect. His presence at each table is constant, kind and discreet. The staff is knowledgeable and welcoming, the times between courses are perfect, the wine is excellent, each course is plentiful, even the simple bread, the best I have ever eaten. The cuisine at this restaurant is not only delicious but also exciting. Except for the cuttlefish ink dish to review, the others were all excellent, from the raw “scallop” cut very fine to the tasty shellfish soup, from the octopus (transfigured) to the sea urchin dish, up to the very tender main course of meat (if I remember it was lamb) and desserts.
