Being part of the Holiday Inn Melbourne Airport hotel this restaurant cooks food to an exceptionally good standard. Had Jambalaya for dinner then truffle mushrooms for breakfast. My palette was well and truly whetted.

good food, reasonable prices. It can get busy so sometimes you are best to book a table. You can snack or order and eat in the bar.

This hotel restaurant was delicious! We loved the free dinner for kids under twelve and our reserved table was all set up with an activity book etc before we arrived. Such a thoughtful idea! Our waiter Bhanu was incredibly intuitive and on the ball. He...was lovey. Thanks for giving us a memorable night when we didn’t really expect one! Great job from all staff.More

A big surprise for an airport hotel! Very good staff at bar and restaurant. Reasonable range of beers and wine from $8 a bottle of beer and $37-$55 for wines plus available by the glass Food is great Simple options or dishes such as jambalaya...or duck entree take it to a next level Staff exceptional- very positive and friendly Good for singles, couples or groups.More

We never expect that much from an Airport Hotel, but we have been very pleasantly surprised this evening. The meals are of a consistant quality, good sized serves, well cooked and tasty.Wine choice is good. The staff are what make the evening- someone is training...them well. Lindley(?) a trainee, is a keeper, but the other staff(including Bar staff) were all very good at their jobs, We will return.More

Had a lovely chicken meal in the evening. Absolutely perfect and my changes to the dish were no problem. Few minor things: I had to ask for a napkin and I was not ask what I wanted to drink. Had a glass of water when...I was sitting down, but no question asked about the drink. Place is not too big, but is a little bit noisy when full. Weird thing: restaurant also caters for hotel, but not all meals offered on menu in rooms were offered in restaurant.More

The Vargas Restaurant is in the Holiday Inn Hotel at Melbourne Airport. The restaurant is well laid out, but lacks any defining character. The table service was very good. We were very pleased with our meals - well cooked and tasty. More vegetarian options would...be good, the one on offer wasn't to my liking so I broke my usual practice of avoiding animal derived foods.More

Stayed at Holiday Inn Melbourne Airport and decided to have dinner with my wife and 8 year old daughter chose the Vargas Bar because they had the fish and chips where room service and Vargas restaurant did not my wife decided on a chicken salad...and I said the fish and chips I then asked the bar attendant if he had a kids meal and the hotel said kids under 12 eat free to which he said that’s in the restaurant unless the restaurant is full it’s free, I found out it was full later, so my daughter decided on the kids beef burger then paid and waited for my meal the my wife’s salad turned up and a burger meal turned up thinking that’s a big kids meal. Then 10 minutes later another burger meal turned up and I said that’s not ours. Another 10 minutes passed and still know fish and chips so I went and saw the bar attendant and he said it won’t be long another 10 minutes passed I saw him again he went to check and came back to say a few minutes. So my meal came and the manager asked if everything ok which I said no this is burnt and so small I said I don’t won’t it and won’t my money back to which she returned all my money and I said no I only won’t return my meal she was very apologetic and nice about it. Anyway worked out the problem my wife’s chicken salad was correct the burger was an adult beef burger which I thought was my daughter so that’s why I thought it was a big kids meal and then he must have keyed in wrong order and then they bought a kids fish and chips meal and it was well over cooked. I only went into the bar because they had fish and chips paid 12 dollars for a kids meal when it was free in the restaurant. See holiday inn review for hotelMore

Spent a night at Holiday Inn and went to their in-house restaurant - Vargas. A $45- two-course special caught my eye - entree of Pork Belly with seared scallops and a main of crisply fried salmon. Both dishes were cooked to near perfection - and...at the price were great value. Staff were friendly, attentive and helpful. A very nice way to finish off a weekend before flying home.More
