"Tomorrow's Fish are still in the sea" so proclaims 'FISH' restaurant - the marquee dining joint of Auckland's Hilton, to underscore how fresh its produce is. I've visited it multiple times in the company of many fine people over the years, all adding up to...some dependable truths - you won't be terribly disappointed here, neither will you be supremely elated ; some blessed dishes will knock your socks off, while Hilton joins Cordis/Langham and even newer glam blokes like SO-Sofitel in the underwhelming feat of not crafting even one 5 star hotel marquee restaurant that leaves you lusting to return. Service is just about okay, and is sadly pathognomonic of almost all the NZ hotel and restaurant industry's lax hospitality standards. My multiple visits here over the years have revealed that I could recognize no familiar faces, complemented by there being none in the staff who recognized me. Forget recognition, just the smoothly choreographed process of top-level hospitality which requires considerable grace, charm and assiduity is simply not on display here. Most if not all the staff were young and green, and they were remiss on more than one instance. The waitress who attended to me for the first hour likely finished her shift at nine o' clock - some managers might dismiss this as an invalid gripe, but there's something to be said for at least one person anchoring and hosting your whole evening from start to finish. Besides, if you are really keen to reward a good server with a tip, you're less likely to do it if the finishing staff were not there for much of the earlier stages of the experience.  Polished wood has been liberally used for the set-up but there is not much distinctive appeal to the place at night, with both carpets and tablecloths done away with. By day, some of the blue water of the harbour generously helps the view, which the restaurant has promptly tried to capsize by stripping the lunch menu of most of the highlights of the dinner offerings.  "Kingfish Panipuri" - Panipuri is a crisp shell filled with a pleasantly piquant liquid that softly explodes inside your mouth. The version here generated no such spin or swim in tart, black salt waters - 'twas instead filled with bland bits of sashimi that had none of the pull of good ceviche, if that's what they were aiming for.   Mt Cook Alpine Salmon has acquired a legendary reputation, from various punters to a 'pilgrimage' article in The New York Times. This dish here was the highlight of my dinner - and an example of the absolute greatness of top-tier Kiwi ingredients. You could easily slice it with a spoon and feed it to an infant - so satiny soft it was - as melt-in-the-mouth as any of the great salmon I've consumed in New Zealand. The flavour was the warm heat of the expert cooking technique, blended with gentle luxurious salmon flavour, like a subtle pricey marine perfume. It's not easy to pair sauces with salmon, but here the controlled funk and cream of a  kombu butter emulsion was a smart accessory.   White Bait refers to the immature fry of fish that look like tiny white slivers when cooked. Kiwis usually prefer to cook them in an omelette and call it 'whitebait fritter'. 'West Coast Whitebait Fritter' was elegantly plated, with an excellent lemon beurre blanc. However, one really had to search for the completely unremarkable, faintly fishy flavour of the embedded white strips of juvenile fish. Essentially what I ate was a $ 40 omelette which I count as my contribution to Hilton so that it can afford its five star upkeep.    Donations further rose with an $ 85 Grilled Crayfish Tail. It was attractively presented with a sexy red shell parked on top. Was the crayfish delicious ? Alas, on that simple metric, the answer is No. Two large cuts of the crayfish were presented. You really had to do a lot of cutting to slice apart the bottom layer of the crayfish - a textural foreboding that concluded with the chewing of shellfish hunks that were mouth-filling and fresh, but lacked the je ne sais quoi of superior shellfish whose haunting tendresse needs no introduction to real patrons.  If you're stuck here and have nowhere else to go, this is not a bad place. But a destination restaurant, it is surely not.  UpnworldMore

Great views of harbor from the restaurant. Service was excellent. Food was very good—goat cheese croquettes, fish of the day (snapper), and salads. Great wine, beer, and drink selections. Would recommend for a nice dinner experience!!

Dined for three breakfasts and one dinner while staying at the Hilton. Good food. My only complaint is that EVERY MEAL I had to hunt down a server to ask for water/coffee meals. Frustrating at times when I wished I could get it myself and...staff chatting/laughing across the way.More

I would not recommend this restaurant. We had a group of 4 couples and we ordered the sharing menu. The meals were not explained to us, we were not asked for more drinks - the staff were not attentive at all. It was overall one...of the worst dining experiences I have had. i thought I would try somewhere that I had never done before and will not be back. Go to Sails if you want amazing service and delicious food.More

The view and foods are stunning. Service is also good. However, it's annoying that I had asked if they could help the birthday celebration for my friend when I booked but no one replied. I had sent an email and received a general feedback with...menu. I made a call in the morning, the staff said they could arrange a platter with candle. After our meals finished, there was nothing coming. I checked with the staff and she had no idea for the arrangement and said I had to request it 2 to 3 days earlier. She said they were busy and could not check the email frequently 😂. The restaurant was not busy at all that day even the last time I visited. Luckily, the Manager came and finally checked the kitchen and confirmed would have the platter with candle ready in 5 minutes! I had very good experience in my last visit earlier. However, it's very disappointing this time.More

I was treated to the 5 course set menu for my birthday. Highlights were kingfish pani puri, grilled octopus and deep sea blue nose. Serving size was generous, wear something comfortable to allow a full tummy!!

Fronting a roaring fire, gorgeous waterfront from picture windows, we chose a multi-course degustation, (after Bellini-bar cocktails, first). Our experience was amazing and absolutely perfect from booking till end. The food was beyond expectation with stunning paua fritters, vension and kingfish. For mains the Blue cod was melt in your mouth and the eye fillet prepared and served perfectly. Heaps of beautiful broccoli....We finished with creme brulee that both the men said they had never had better. Our wait staff were experienced, articulate and happy to answer questions. I was taking friends to this experience as they do not go out often and they are hard of hearing. We were seated in a fabulous spot where conversation could be had and we could see what was happening on the water. Altogether it was a 10 out of 10 experience and I felt represented great value for money.More

A nice quiet atmosphere with friendly service by all the staff. They were most attentive as well. The food was absolutely delicious. I cannot remember the name of my dish but it had salmon and shrimp with corn and each bite was so delightful!

We had a delightful experience dining at FISH last night. It was my husband's birthday which was celebrated with our friends. The food was delicious, the service was fantastic and the recommendations as to food and beverages were excellent. Everyone was so friendly and my...seven year old daughter still can't get over being called madame! Thank you for treating her like a princess. My husband and I had a fabulous time.More

Like the above I haven't been to Lava but Fish has a great view over the harbour. Great views, food and fantastic service. You could also look at Whitebait. The view back over the city would be amazing on NYE.
