Set in the scenic Ojo Caliente River Valley overlooking the majestic Jemez Mountains is Chef-owner Graham Dodds’ serene NOSA Restaurant & Inn. NOSA is an old Spanish word for “ours” which speaks to the communal nature of a place to gather, dine, and rest. Our menu evolves with the season and the availability of local ingredients. We offer a luxurious five-course prix-fixe meal with optional wine pairing that allows for time to enjoy the food and stunning views of Northern New Mexico. Reservations required. We also host private events for 6-60 people. NOSA is also a place for rest and retreat. We have 2 King Suites and 2 Queen Suites, all posted on Airbnb. We offer breakfast and room service upon request for our guests.

What a wonderful way to start the new year! Four of us dined at NOSA on New Year’s Day afternoon and enjoyed a perfectly prepared five-course lunch. We were well cared for in every way from the exquisite food to the impeccable setting and service. Owner/Chef Graham Dodds and his team love their work and it shows! The overall experience at NOSA is an outstanding value for the quality it generously offers.

We've been to Nosa twice now, once for lunch & once for dinner. I can only use adjectives: delicious, artistically-plated, thoughtfully-balanced. Did I mention delicious? We've never had such friendly interactions with a chef. The servers were personable and helpful as well. It happens in a beautiful location, whose ambience allows one to slow down and enjoy a wonderful meal.

We've now been to NOSA four times since they opened a year ago. Our three previous visits were for Sunday brunch. Those were all so pleasing that we decided to book a room and have dinner, making a drive home (50 miles) unnecessary. We had been frequent customers in the late '90s just after David Heath and John Johnston opened it. Heath and Johnston retired and the property went through a period of relative quiescence. NOSA is the newest and its owner/chef has given new life to this exquisite setting. We're delighted.

Chef Graham Dodds is a master at assembling items that please all five of our taste senses—from the sweet to the umami. We could tell at dinner that the starter of squash, arugula pesto, and parmesan was an outstanding harbinger of the four course to follow. The mushroom/fennel bisque did not disappoint our expectations. This led to a fabulous rainbow trout salad, charcoal-grilled Wagyu hanger steak, and finished with cinnamon raisin bread pudding and mascarpone/sour cherry compote.

The du jour breakfast before we headed home covered all the bases for breakfast—house granola, sheep’s milk yogurt, duck eggs— Chef Graham even squeezed some orange juice to accommodate my wife’s question about its availability.

Our accommodations were superb, combining space with comfort and all the amenities one would want…even the absence of the ubiquitous television that intrudes in nearly all hotels and inns.

We plan to return in September with a couple of guests.

We found this by accident and considerate ourselves very lucky. It is a scenic 40 minute drive north of Santa Fe and about a quarter mile up a gravel road into beautiful hills with spectacular views.
The restaurant and inn are elegant and lovely with enough local SW accents to feel authentic but totally elegant and modern. We hadn’t planned on staying overnight but did look at the rooms which are lovely and luxurious.
We had reservations for a price fixe lunch and had no idea what it was going to be like. It turned out to be as good a meal as we’d ever had. Food was locally sourced, perfectly presented and every one of the five courses was an experience.
Since it has only been open a couple of months, there is little or no publicity about this place and we had no idea that the chef was Graham Dodds, a well-known chef from Texas.
Even though we live on Santa Fe only 40 minutes away, if we had clothes with us, we would have stayed overnight just to experience the inn and the food for breakfast.
We will go back as soon as we can.

Dining out with friends is one of my favorite pastimes…and we hit the jackpot today at @grahamldodds NOSA Restaurant and Inn about an hour north of Santa Fe NM. Chef Graham locally sources his ingredients and thoughtfully prepares and executes each dish with a flair. We loved the pace of the meal, which is very European in style as it was not rushed, but perfect timing between each of the 5 courses. The all women wait staff were gracious and worked beautifully together. All in all, we will return sooner than later.

We had a very nice 5-course, prix fixe meal. The service was excellent. Every course was delicious. I don't normally order steak at a restaurant but the rib eye served tonight was outstanding.

Reservations are necessary. Once the courses started coming it took about 2 hours to get to the dessert course. That's not a complaint, but readers should be aware that this is not a restaurant for people in a hurry.

The menus are posted ahead of time on the web site, which was useful as it allowed me to select the evening whose menu best suited the tastes of my wife and I.

Outstanding place for a special occasion meal. Chef Graham Dodds takes farm fresh ingredients and weaves them into magical dishes that are far greater than the sum of their parts. This is food as art. He has a delicate and nuanced palate that give his dishes a perfect harmony, both with each other in the overall menu and within the single recipe. No one flavor dominates, yet they all work perfectly together like a symphony. One of the best meals in memory. Highly recommended.

The Inn is beautifully located, with views of a mall valley and mountains in the distance. The rooms have a semi private patio and are very comfortable, with luxurious bed and linens. We dined at the restaurant 3 times and we’re impressed with the quality, inventiveness and execution of the food, it was like no other place we have been to in New Mexico; so delicious.

We frequently make the drive from Santa Fe to NOSA for the 2:30pm Sunday lunch.
It is Magical
The setting; the warm welcome from Heidy for starters.
The wine selection and the beautifully plated dishes add to the experience.
But the combination of flavors in each course that Chef Graham masterfully prepares is beyond delightful.
If you are visiting Santa Fe or Taos put NOSA at the top of your dining list. It is an experience you will not get elsewhere!

The high desert can be magical. Drive north of Santa Fe, add a meal prepared and served with perfection, enjoy a night in a lovely room a few steps away and you have a winning combination! Graham Dodd has created an exceptional experience you won't want to miss. Celebrating a special occasion - or just want to take a drive for lunch - a meal designed and created by such an exceptional chef is not to be missed.
