Ynyshir is a 5 star restaurant with rooms near the Snowdonia National Park, Aberystwyth and Machynlleth. The restaurant at Ynyshir holds 5 AA rosettes - the first and only ever in Wales and has held 1 michelin star since 2014. Chef Patron Gareth Ward serves alternative British tasting menus using the very best of Welsh and British produce. Ynyshir showcases the best of Welsh ingredients following the seasons, such as Welsh Wagyu Beef and Anglesey Onions, locally foraged sea herbs from the estuary and greens from the woodland floor and gardens. During hunting season expect to see wild deer and local duck, grouse and partridge, and in summer Welsh Lamb. Gareth and his team pickle, salt, ferment and preserve fruits, leaves and berries carrying the harvests through the winter and into the spring. Ynyshir is a restaurant experience, finishing with a bed for the evening and breakfast the next morning!

We were lucky enough to have a diner and overnight stay just a week before the lockdown restrictions. It was my birthday treat, and we both had a lovely stay. The property is a gorgeous and histoic home situated in a lovely rural spot. We were warmyl greeted on arrival and shown to our gorgeous room overlooking the fron of the house. Our room was exceptionally spacious and well cared for. We went for pre dinner drinks and then to our dinner. All the staff are exceptionally friendly and very knowledgable on the food and drink. We were lucky to have the table which faced into the kitchen and it was a joy to see how quiet, focus and calmly the kitchen runs under the watchful eye of Gareth Ward. We were all able to talk to him after the meal, and take pictures etc. The food was divine, even the courses we thought would not be to our tastes were excellent. Of ocurse this is not a particularly cheap night out, but for a special treat if you are into your food this would be a great place for you.

We had the pleasure of dining and staying here.....what an amazing experience.
The Garden Room we were in was one of the most beautiful rooms we have ever stayed in and the dining experience was exceptional. We booked an entire week’s trip to NW Wales around this one place and we are so glad that we did.
We have been fortunate to have dined at numerous Michelin starred restaurants over the years including 3 star establishments eg French Laundry in California, Le Cinq in Paris, La Pergola in Rome.... but I have to say that this place surpassed all our expectations.
Yes it is expensive but you get what you pay for - high end dishes that are delectable and a level of service and professionalism that you will remember for a very long time. This was a belated birthday celebration (as my birthday was during lockdown) and I was so delighted we came here!
My husband and I loved this place and we can’t wait to return. Thank you Gareth for a truly memorable experience ❤️

This a place for foodies or someone looking to have an amazing experience with the main aspect the food.
We had a wonderful room, a Garden Room with large with big doors opening up with a view over the lawn. We had been here many years before but there has been a complete refurbish and amazingly well done.
The main event started at 5pm when people started arriving in the bar. Drinks were ordered and provided and then two small nibbles, in effect posh bar snacks arrived. There was a definite air of anticipation mixed with a feeling of the unknown as the first 4 dishes were served still at the bar. People started chatting amongst each other, sharing the feelings of what was happening.
Everyone was then escorted table by table into the restaurant next door. This is not a large place and there were 6 people in the bar. Those on the chef's table were elsewhere.
Then the main performance began. Dishes arrived with an explanation given by one of the chefs, there are no actual waiting staff. Masks as ever made it more difficult to hear but we managed to catch it all and asked what something was if we hadn't heard. Dish after dish turned up. There was a good buzz and also the actual DJ was playing vinyl and it was fun watching him getting carried away with his earphones on. We loved the music, it wasn't the normal lift music and it added to the difference of the experience.
We think it was 30 courses in all. There was one we didn't enjoy but the rest were great. We were amazed after 30 courses, they are tasting menu size for 30 courses, we did not feel too full but just right. The end was quite an excellent end - you need to go to see and experience it.
Afterwards we went up to the pass where the chef/owner Gareth was standing chatting to anyone who wanted to chat to him, which we did. What a humble and lovely man, absolutely none of the often found smugness of chefs who know they are good.
All the waiting staff were great and as good at 10.30pm at the end as they were at the beginning.
We joked breakfast, again all eaten together, was going to be a tasting menu. It was sort of, but light and lovely. Bottle of juice on the table, tea/coffee, lovely yoghurt, very good ham (Iberico) and cheese (from Hampshire) boiled eggs, hot smoked salmon and more of that lovely sourdough with butter and lovely light chicken liver parfait.
We then had a 4.5 hour drive home and the memories just carried us there.

We were given a preview of the the food on arrival along with a small cup of a tasty broth. At this point we were given the choice of having the menu with the Welsh lamb (£200pp) or for £250pp we could have the Wagyu beef. We wanted 2 lamb and 2beef but we could not. It had to be one or the other for the four of us. Had we gone separately we could have done. Anyway we plumped for the beef.
Dinner was set to start at 8 o'clock but they asked that we meet in the bar at 7 o'clock and we were excited. Whilst in the bar the food began to arrive, first of all a delicious tempura squid, then raw tuna, raw scallops, raw mackerel and raw lobster all in similar misu style.
Then in the restaurant more course after course of miniscule dishes.
The Wagyu (£200 extra) turned out to be a bit of tartare and then a tiny square which must have weighed all of 10 grams!
Anyway on and on we waded until well after midnight and by then our indifference to it all was uniform, so we went to bed before the end.
Our rooms were top class, I must say.
Breakfast was carrot and ginger juice, smoked salmon and and a sausage, bacon and egg sandwich - no choice.
We had already paid £1600 when we booked the rooms and our final account was £2,330. We hadn't gone mad with the drinks, 2 bottles of wine and I stayed on beer
A service charge of £160 was included, which we paid as the staff were very good, but, at the prices they were charging, we thought that it should have been left to our discretion.
Anyway our meal for four was £1530 and it turned out to be more of a test of stamina than joyful!

A late Christmas present for me due to Covid but it was certainly worth the wait and for us a long drive.
From the moment you arrive until you leave you have the most wonder experience.
Hygiene here is top priority, temperature checks when you arrive and face coverings for staff and when moving around.
The room we had was the quietest room we have stayed in anywhere and beautifully decorated with a great bathroom.
As for the food - well, what can I say, truly amazing. Even breakfast was made into an event.
We were lucky enough to sit in the kitchen. Gareth and his team made us truly welcome and we had the most amazing time here.
I'm not going to go into detail about the food so as not to spoil anyones forth coming visit.
All I will say is that you will not be disappointed. Can't wait to do it all again. Next time with our friends.

Great experience from start to finish. Lovely room in main building, full of character, good modern bathroom. Main event started at 5 with everyone being seated in the bar then a slow flow of each dish described by the staff who were additionally preparing/serving the dishes. Wonderful flavours, textures, both raw and cooked, small enough to taste everything anticipate the next. 31 dishes in all over 5.5hrs, all nicely punctuated so didn’t feel drawn out. Wine is lovely but expensive and clearly the time spent in restaurant is long so easily means you consume more than one bottle. DJ set in my opinion was fabulous, loved the music, very Ibiza vibes. Yes it is slightly louder than usual restaurant music but gave it a very buzzy feel. End of the night section was great, loved it! Breakfast the following morning was lovely too, not too much food but enough different elements to make you know you’ve had something better than your average hotel fodder. All in all a great foodie experience and would recommend as a special treat.

The first thing to say is that you are paying for a culinary experience to taste incredible food designed and cooked by a Michelin starred chef and his team of amazing staff in wonderfully sumptuous modern surroundings using nothing but the best ingredients from locally sourced lamb, pork sourced from Derbyshire to rice, Soy sauce and Wagu beef sourced from Japan.
The experience begins as soon as you arrive where you are welcomed at the front door and does not end until you leave after breakfast. We sat at the pass which I must say enhanced the experience tremendously and would recommend taking this option if its available.
Every member of Gareths team is incredibly knowledgeable about the food that you are served and because of this and their enthusiasm they are a pleasure to talk to.
Gareth himself is very approachable and happy to chat especially about his food which he is obviously very passionate about.
As I said at the beginning of this review this is a culinary experience that you will never forget but you must be willing to try things that you maybe wouldn't normally eat and you must enjoy animal protein because every course includes it.

How anybody could find fault with this experience is beyond me so ignore any negative reviews. The surroundings and building are stunning and when you arrive though you arrive with other guests your party is individually treated to the start of your experience, which is brilliant. The rooms are absolutely stunning, as is the decor of the building. It’s all about the food though and Gareth Ward is an absolute genius. Every one of the 30 or so mouthfuls are completely knockout flavour. The intensity and concentration of flavour and beautiful texture in every dish is truly mind blowing. The quality of the protein is incredible but what they do with it is pure wizardry. Having the DJ there is brilliant and gives the place such a great atmosphere. We were lucky enough to be sat on the Pass Bench right in the kitchen and got to chat to Gareth and the rest of the team and watch them work. The teamwork, passion and general energetic atmosphere was so inspiring, we had an incredible evening. Oh and breakfast was incredible too! A5 wagyu fat Welsh cakes and jam?! Outrageous! Ynyshir is an absolute treasure of a restaurant and we will be back!

Had a lovely big garden room, set a little apart from the main house and the other separate rooms.
Dinner is early, had to meet at 5.20pm just after everyone else had to meet, we were dining (4 of us) on the new separate Chef's bench.
first 7/8 courses are fish, most were very tasty, although it would have been nice to have more of them cooked rather than served raw.
Then meat dishes, the beef burger was delicious as was the katsu chicken. Pork dish was chewy and one had piccalilli with it which was very harsh.
Puds were nice, one of them had fois gras in, didn’t add anything to it, not sure if that was trying a little too hard.
mid-way through I was crying out for some carbs; one dish has a tiny spoonful of rice and apart from that it's meat or fish, very little veg.
Every dish is tiny, really a canape.
Everything prepared in front of us by our friendly talented Chef Charlie.
There was plenty to enjoy and flavours to experience, but sometimes you need a little something 'normal', just occasionally for balance.
Music did get a little loud, ok for us 4 blokes, but a romantic evening would be difficult.
Wines choices were good, and not overpriced. Digestives after your meal, not a great selection of brandy or whisky.
Bed was comfy and surroundings very quite.
Had to meet for breakfast, again all at the same time. Breakfast really needs some work. Homemade yoghurt and granola was good, but small. Then onto Homemade bread, nice.... rich liver parfait, soft boiled egg in its shell, hot smoked salmon and some other bits in oil.
after the richness of dinner, you really want something lighter and easier to eat. maybe toast the bread, a few preserves, some fresh fruit salad, maybe even a croissant or some scrambled eggs.
Everyone was super friendly and helpful.
I would visit again, but probably not too soon, as I like a little light and shade in my food and this was, although a great experience, just didn’t quite hit all the right spots…. For me.
I'm also not sure if it's great value for money if you stay overnight and have dinner and one night is plenty.

Truly mind blowing food experience from start to finish.
Beautiful grounds and unique service. We stayed in a delightful tipi with private hot tub. Dinner service from 5-10.30pm with over 30 courses.
Elegantly the best food we’ve ever enjoyed, boundaries were pushed combing best ingredients from around the world and here in Wales.
Leave your pretentiousness and expectations at the gate, loved the “no dress code” policy, we were comfortable and had soo much fun!
Gareth and the team executed every dish with utter precision, service was impeccable paired with great drinks, music and atmosphere.
Any “foodie” worth their salt would recognise this for what it is, we sat at the 2-person pass bench in the heart of the kitchen, watching eagerly as the team delivered a service like the finest rock ballet.
There’s restaurants and food that we have been lucky enough to visit and experience around the world at all levels from banging street food to 3 Michelin stars and this blew all of them out of the water.

Hi. You do not sit down in the restaurant and have a full cooked English breakfast. Check out is at 10:30 and you will receive a beautiful coffee and a takeaway bag with your breakfast in it which for me completely added to the experience of the weekend. We felt The full sit down breakfast was not in keeping with what this place is about. I hope you enjoyed as much as we did.
We booked the pass bench and loved it, it’s the perfect seat, there was banter withGareth and the team and seeing things up close was brilliant. You’ll love it anyway, but if it wouldn’t be too much of a financial stretch I’d say go for it!remember there are other add ins already to the meal though!
You are going for the food not the room, however I am sure you will not be disappointed, we weren't.
