There are multiple outlets offering trips out to the rock and they are all along the sea front. However, it does depend on weather conditions. We went out at 6.30am so it's best to have something arranged before you arrive in case early morning is the right time to go. If not you can spend time in the town while you wait. The only advice I would offer is pay by credit card and check terms re refunds if you can't get out.
