We had the Best experience at The Gritti Epicurean School with Franco our chef for 4/5 hours. We learnt so much from Franco he has a passion for food & teaching and I would highly recommend you to book it! We sat down after cooking and ate the wonderful food we cooked with beautiful Italian Wine. This is a must have experience or a beautiful gift to give to your loved one. I found out 5 minutes before from my Husband what we were doing, it was a great surprise. Thank you France & The Gritti Palace we will be back!

My husband and I did a private cooking class with Franco and it was one of the best experiences we had in Venice. We met up in the morning, walked to the fish market, bought all the necessary ingredients for our dishes while learning at every step. Before coming back to the Gritti Palace to start preparing & cooking, we stopped at a local bar and had a morning pastry with a drink. It was so nice to experience the local vibe. Franco was so patient with our questions, picture taking, and video recording. We loved every step of that day and learned so much. I highly recommend you take half a day from the busy tourist attractions and experience Venetian cooking with this authentic Italian chef!

Our stay in Venice in these very singular times will remain memorable for obvious reasons, but also particularly thanks to wonderful moments we shared with Franco in his immaculate kitchen!! Of all the off the beaten tracks activities we made, this was definitely one of our favourites!!
When looking for the perfect ingredients at the traditional and very Venetian Rialto market, Franco was very generous and shared with us some very useful tips during his selection. During the cooking class he was incredibly enthusiastic leaving no detail out of his explanations and transmitting his passion in a very simple yet highly sophisticated manner.
We definitely look forward to repeating this experience with our whole family next time we are in Venice!! Meanwhile we cannot wait to try to replicate his recipes at home hoping the magic of Venice will be revived!

This cooking class exceeded our expectations. It is worthwhile if you are interested in cooking, food, wines or a combination of any one of those things AND want to do something different in Venice. No cooking experience is necessary at all. From the beginning of class through the multi-course meal, Chef Franco made this a fun experience for everyone.
This was our third time visiting Venice but it was our first time attending the Gritti Palace Epicurean School. We were looking for something different to do on a day when museums and other attractions were closed.
We were introduced to Chef Franco and to his sous chef in the beautiful Gritti Palace's Chef's Studio. Chef Franco described the meal we would make and the different types of work and techniques that would be employed. Our group had severe allergies to seafood and he adjusted the menu to accommodate. Throughout the cooking process whether it was cracking eggs, building flavor in the risotto stock, cutting vegetables or butchering the meat Chef Franco found a way to get everyone involved. Chef made sure to advise and warn everyone when dealing with sharp knives or with hot pans and water so that everyone remained safe and had a wonderful time.
The food we made was delicious. We produced a three course lunch and Chef had wines paired with each dish. Not to mention the appetizers and pre-lunch bubbly. The appetizers consisted of beef tartar and a finger caprese salad. The first course was a white asparagus risotto. It was smooth, buttery and just the right level of texture from Chef's expert technique of whipping the risotto mixture. The main course was a stuffed Guinea Fowl and truffle mashed potatoes. The dessert course was a raspberry creme brulee.
This cooking class was one of the highlights of our trip and created many memories for our group. We enjoy keeping in touch with Chef Franco and we continue to use some of the techniques he shared with us in our own kitchens at home. FYI It is not necessary to stay at the hotel to join this class.

Chef Franco did an incredible job of guiding us through the culinary experience. Our group of 4 had a terrific time - one of the best highlights from our trip to Venice. He made the entire experience fun and interesting, even while helping us produce 3 delicious pasta courses with wine pairings. Given the raw materials he was working with (ie. me), that was quite an impressive feat! We are very grateful, and i would highly recommend it as a way to make your trip to Venice distinctive.

Our morning in the kitchen with Chef Franco Sanna was a truly enjoyable and memorable morning. We learnt so much from Franco who is a talented chef and passionate about his craft and with a great sense of humour too! We had lots of hands on experience and on the menu that day was risotto, sea bass and crème brûlée. All the ingredients were absolutely tip top, the absolute best in terms of quality and freshness. We came away at the end of a long morning with full tummies, our apron to keep and all recipies. I would highly recommend this cookery experience with Chef Franco. Where else in the world can you spend a morning cooking and see the gondolas float by outside your kitchen window!

Cooking school at the Gritti Palace 1:1 with Chef Franco. So much more than cooking - style, passion, humour, and generosity. What a wonderful experience - choosing the freshest ingredients at the local market, chatting with the fishmongers over the daily catch, a 10.00am aperatif at a local cafe (this is what they do in Venice!). Then with Chef Franco at work improvising with every dish, his unique blend of artistry and expertise, and so generous in sharing his knowledge and passion. What an experience. Ciao Venezia!

We had a wonderful experience cooking with Franco. Travel issues had us arrive later than anticipated, but they were more than accomodating and ensured we still got a complete experience. We made several great courses and learned a variety of new things - from as simple as how to wash vegetables to maximize flavor all the way to cooking an entire sea bass in an egg/salt crust.
Would highly recommend booking this - it is well worth the cost and exactly what we were looking for.

This experience was incredible and well worth it. I highly recommend it this experience and be sure to request Franco.
Franco - a fantastic chef and great storyteller - took us to the market. We inspected various stalls and make some excellent selections. I even learned how to find the freshest fish from the market.
There is an outstanding private dining and kitchen area inside the Gritti Palace. It is an ‘oh wow’ room. First we prepared a multiple course meal and then later we dined like royalty.
My wife is still talking about this day months later. When you are a foodie or just want to have a great day, this is the best one!

What an incredible experience. Chef Franco is a wonderful host and teacher that truly made the experience memorable. I’m an experienced cook and my husband is not. I also am celiac, but none of these elements were a challenge for Franco. I loved how our meal was created by what was fresh in the market, selecting mantis shrimp (I have never seen these before) for the stock of our risotto. And my husband and I both were involved in the meal creation based on our skills. I learned new techniques and the Venetian perspective during our class. Also, just the walking tour of Venice was one of my favorite times in the city - I loved the small bridge that had the best view of the clock tower.
Finally, the meal was incredible - delicious seafood risotto with black truffle, potato crusted fish on ribolatta soup, crème brûlée in a way I’ve never seen. I cleaned my plate on each course and the wine pairings of local wine with the sommelier really elevated the experience. I’m excited to cook these recipes for friends and family and remember what a magical time we had in the city of Venezia. We plan to come back and do it all over again!
