Amazing Oaxcan Mole making experience!

Donna is such a delight!! We had an excellent time in her mole cooking class, and would absolutely recommend it to others. She is very knowledgeable and passionate about Mexican cuisine, which made her an excellent and authentic instructor. We would definitely go back to take more classes with her. Her colorful kitchen is full of personality, too! Highly recommend.

A world-class cuisine from Oaxaca: Mole!

Loved our Oaxaca Mole class with Donna. Learned the history, variety, and nuances of MOLE-- very misunderstood flavor. Enjoyed learning and working with a myriad of ingredients and techniques involved. Fun and delicious!

Second time around just as great!

My first class with Donna was a few years ago with my husband, "Lunch in Yucatan" and this time I took the "Enchiladas" class with a friend. Donna has been living in Baja and traveling Mexico for 35 years soaking up the oral cooking traditions throughout. You won't get a more authentic teacher and everyone had a chance to get hands on and participate. I have never tasted enchiladas as we prepared them in class (amazing!) and even went and bought one of the traditional clay skillets she uses for most of her cooking. My friend and I are inspired to host a Cinco de Mayo party to show off our new cooking skills. Thanks again Donna!

Don’t fear tamales!

My wife and I have taken most of Donna’s classes, but I’d always shied away from the tamales class. I’d always thought that tamales were dry, with thick, tasteless wrappers surrounding uninspired fillings. After Donna’s class, the world of tamales opened up for me. Moist and flavorful, with a diverse universe of composition and construction. Made inside corn husks or banana leaves, as dumplings for stews and soups, or as main courses, or desserts. The whole process and history is covered, from sourcing the right corn flour, making and forming the wrappers, preparing the fillings, and the proper method of loading the pot for steaming. Easily the best tamales I’ve eaten, and I made them myself (with a little help from Donna 😉)!

Cooking class with Donna

This is my second class and I must say, it just keeps getting better. We had a phenomenal class making two different types of Chile rellanos and chorizo! It was a great class with lots of expertise offered by Donna. She starts with an aqua Fresca with hibiscus to start with. Later we had tequila tastings, too. It’s just a good technical class taught by someone who knows her stuff. I will definitely return!

cooking DEMONSTRATION-not a class

We had tried to get into Flora Farms but they were sold out.This was the only one we could get into plus it was a third of the price .Donna seemed very sweet when arranging it all.It was a demonstration and she got people to volunteer to fry and brown and cook.
We were also told it included lunch.We did a molè class-the dishes were delicious BUT we came back starving-she gave us each a tiny bit of soup for lunch and offered more but when we went to grab more the pot was removed.The other molè took a bit longer and she gave it to us to go-well-a little rice-a quarter of a zucchini and some molè-we were starving and had to get lunch.I believe at Flora Farms the lunch is so large that you actually bring a to go box and its enough for dinner.The demonstration would have been nice for an hour or so but four hours got tedious.I guess if you cannot cook and want to learn and watch its ok but not a course or class for people who can cook
The dishes she made were amazing but I would not place in her a league of great cooks-she for sure does cook authentic Mexican cuisine but we were disappointed

Fun learning experience

A fantastic and fun experience learning how to make some classic Mexican comfort foods. Donn'a residence, where the class takes place, is a magical hand crafted gem off the beaten track in Cabo San Lucas - it truely is the house of colours!
My girlfriend booked this for us, knowing one of my goals for 2019 was to become a better cook. I couldn't think of a better way to kick start that goal than with the classes here!
Donna instructs not just on ingredients, but the history and variants of the food she teaches. We were taught how to make excellent Guacamole, Salsa, Tortilla Soup and Mexican Style Potato cakes. For a real cooking novice, I was amazed and intrigued at how easy it felt for me to make these tasty dishes on my own - and indeed they are!
If you are after a true Mexican experience in San Lucas, I can not recommend this highly enough!

Another Awesome day wtih Donna

This was our second time visiting Donna's house, and this time we opted for a private lesson. We decided to tackle the granddaddy of them all the Mole Negro! We followed Donna to the house where we met her friend Miguel and immediately made our way to the kitchen and began cooking our first course... Mole Verde, which we ate as a soup. From there we began to "walk on the dark side" as Donna likes to call it as we began toasting and frying up the ingredients for our Mole Negro. The dish turned out amazing and the cooking was a joy, but the best part of the whole experience was our conversations with Donna and Miguel. It felt much like a holiday dinner at a dear friends house. We talked while we worked and enjoyed the fruits of our labor together at the end along with some beers!
Donna has a true gift for relating the cooking techniques as well as the stories and histories of the foods we were working with. The biggest compliment I can pay Donna and Casa De Colores, is that we felt like family!

Donna and Miguel, Thank you so much for your time and your hospitality! I cannot wait until our next chance to spend a day with you!

A wonderful time

We spent four happy hours with Donna today. She is friendly, knowledgeable, fun and her location is fabulous.
Donna is an American by birth who has studied traditional cooking since her teens. We made fresh red salsa, tortilla soup, cactus salad and potato cakes - all fresh, clean ingredients cooked in her kitchen overlooking both the Pacific and the Sea of Cortez.
A fabulous 1/2 Day learning and eating and laughing.
Next time we are in Cabo, we will go back to learn how to make mole..... it’s enough of a draw to be looking at airline tickets before we even leave town.

Enchiladas !!!

We have been cooking with Donna for about 8 years . Her classes are amazing and very informative !! We made enchiladas in this class and it did not disappoint . We made everything including the tortillas !! If you get the chance to cook with Donna I highly recommend it !!
