We will begin our experience early in the morning by meeting at "Porta Carini" entrance door to one of the most famous markets in the city, the Cape. We will enter the market alleys, full of merchandise, and here we will buy everything needed to make the menu you choose together. Among the stalls full of goods, between colors and voices you will have the impression of being in one of the souks of any Muslim city. Visiting a market in Palermo is a multicultural experience, they fully express the multifaceted and cosmopolitan culture of the Palermo area. After our purchases, we will head towards my house, which is just a few minutes from Piazza Politeama. Here our experience will continue with the preparation of the dishes. Under my supervision, my kitchen will become the setting for your culinary creations.

      Sharing Sicilian cooking is Marco!
      As all other reviewers have raved about Marco, so do I. Marco was gracious to book me on a quiet Monday, despite being a sola student. Because I have some experience in the kitchen, I felt more like an assistant than an observer of his techniques; I learned so many “tricks” from Chef. Marco is skilled (of course!), warm, humorous, clear in his instructions, and very encouraging. Sharing our delicious meal together was the “sugar on top of the cannolo” (“icing on the cake”). Using Marco’s recipes and the videos and fotos I took as reminding guides, I’m planning to bring a few friends into my kitchen to see what we can do with some Sicilian dishes (with some Sicilian wine). “Good wine for drinking, and good wine for cooking!” ;-)

    A worthwhile experience for those needing a break from all the beautiful churches of Palermo and want to get into all the flavours the city offers. Marco was warm, friendly and accommodating, sharing stories of his life as he shared his recipes and techniques. Needless to say the food was delicious and I enjoyed these Sicilian dishes and the stories behind them as much as I enjoyed the laughter and taking a moment to just be in the kitchen. As Marco says “Relax, you’re in Sicily!”
    Tip: do this at the beginning of your trip, so that you know all the best places to eat!

    A fantastic experience in Palermo. We booked with Marco shortly before visiting and he made sure we had a great time. He communicated exact time and location to meet. He spent time to ensure we got everything we wanted to make and eat that day and also made sure to check for any dietary requirements and allergies & intolerances. Everybody in the group was catered for by making several authentic dishes. I would highly recommend a cooking class with Marco to anybody that visits Palermo

    Everything was fabulous! Marco was quickly responsive with emails ahead of event, met us at market and immediately made us feel like family. He has such a warm, humorous, knowledgeable, and flexible manner with all the people we had for the class. Watching him interact at the market - and being encouraged to interact - was fun! Our menu changed by the minute based on each person’s input, so everyone had opportunities to pick what they wanted. When we arrived at his incredible home, the table was beautifully set and he showed us family pictures before we went into his kitchen to cook. All concepts were made fun and to teach us correct technique, and everyone could participate with many things. Wine was shared, conversations flowed, and beautiful lasagna, caponata, and swordfish with orange was created! Then we all sat together to share the meal and give thanks to our gracious host, teacher, and new family friend. Grazie Marco!

    This was one of the highlights of our weekend in Palermo. Marco is a very engaging , knowledgeable, funny, warm and entertaining chef and his easy nature and light banter is infectious in the market and also in the kitchen. We were a group of 8 with four from Ireland and four from the America and it was very relaxing and enjoyable, It was very comfortable and great to sit down at the end of the work in the kitchen and enjoy the fruits of our labour. I would highly recommend it for all levels of cooks, and a brilliant way to see the activity of the market, eat and prepare traditional Italian/Sicilian food and relax and enjoy Marco's professionalism in a very chilled relaxed and thoroughly enjoyable 4/5 hours.

    My wife and I booked this cooking class as just something fun to do in Palermo on our Honeymoon to Sicily, but it ended up being our favorite activity of the whole trip! We would recommend this to anyone that is spending even just one day in Palermo! It was an absolute pleasure getting to learn from and spend time with Marco. He took time to show us around the market in the city, had us try some of the best and most authentic street food, and then walked us through the ingredients we collected for the meal we all cooked together in his home. When we were cooking together at his apartment, he really made us feel like family, even though we had only met just an hour prior. He was so welcoming, funny and gracious with us as he taught us how to cook this dish. And as for the food- the best eggplant parmigiana my wife and I have EVER tasted, and we got to cook it! We will definitely be booking another cooking class with Marco if we ever return to Sicily, and we will be recommending this to any friends or family that visit as well.

    Marco is simply superb! We had a fantastic time with him and Georgio - a delightful Italian/English student - in the market buying the freshest produce, then learning how to cook traditional Sicilian cooking like Marco’s grandmother taught him! Marco has created a bespoke cookery school in his traditional Palermo apartment and used all his professional chef skills to teach us not just great Sicilian recipes but also lots of tips and tricks to make all our cooking better. We have attended cookery classes all over the world and this was one of the best. Georgio provided not only perfect translations from Marco’s Italian to English (although his English is actually very good!) but encouragement and support as we cooked. We thoroughly enjoyed our cooking with Marco and Georgio - and also our lunch and conversation.

    This was the highlight of our trip in Palermo! Marco did an amazing job. The tour started in Capo Market, where we learned some history about the three markets in Palermo and picked out our fresh ingredients for lunch. Our 5 year old participated in learning how to cook lunch, while our 3 year old mostly watched. Marco was phenomenal with both kids and even made a separate pasta dish for them! That lunch was our best meal in Palermo! Marco also have recommendations for places to eat and visit around Palermo and was available to help with any questions you had, whether it was about the food, city, or his background in learning to cook in Rome.

    We had a great time with Marco. He is passionate about food and a skilled chef. It was amazing to shop with him and watch him prepare, and then have him teach us now to make pasta, sauce and vegetables from scratch, , and then eat it! And, we learned some techniques about chopping, sautéing, and preparing pasta that we will use in the future.

    Marco is the best! An amazing chef, fun person, and entertaining host and teacher. Marco lives in a traditional style beautiful apartment where we were cooking our meal: aranchina, swordfish, cannoli, orange fennel salad. We cooked, learned tips and tricks and washed down our food with a wonderful local wine. Prior to that we’ve met at the market, decided upon the menu (Marco is open to all kinds of dishes) and Marco got all the ingredients at the same time giving us a market tour and advices.
    Good times! Don’t even hesitate.

    This was our best day of vacation! We were in Venice, Rome, Greece, France, and England. We weren’t sure what to do in Sicily off our cruise ship but I would book this again and again.
    Marco is sincere, kind, fun, funny, an amazing chef and so engaging. He even got my picky child to eat a green! He taught my dad some new tricks and we had so much fun. Our meal was amazing and we cannot wait to make it again back home.
    This day is as described, we met Marco at the market and we quickly discussed the meal. Once we got to the fish and we saw the swordfish we easily switched to that. Marco is so charismatic.
    Our two best and now often said quotes are “Is mistake” and “cook with love, if you’re angry, go to restaurant!”
