Bonjour marymV3755HI, thank you for your review highlighting the class was very well run, your instructor was a lot of fun and at the end of the experience you had made 'beautiful creations'. In relation to working in pairs, I would like to clarify two things: 1. this is for the purpose of ... making the meringues. Yes, we make one meringue per two people (anybody who has made meringue before would understand why). But each participant actually does get a full hands-on experience for each of the critical steps of making macarons ( weighng, sifting, macaronade, piping, garnish filling, etc...). 2. this is also captured in our FAQs and T&Cs section on our website (which we encourage prospective clients to read before signing-up), under the section 'are your classes hands-on?'. It has also been reviewed by many on this site. And this is what any schoo with a true hands-on experience does (but beware, some people only provide a demo experience unlike us). The awkward lapse of time between cooking completed and sitting down is called ...'filling the macarons' - which you were doing. So indeed it is very awkward that you found it awkward. And as far as sharing the class with a couple in love in Paris thank you for sharing the insight with other travelers. I think it is important people know that they run the risk of meeting people in love in the city of ... Love. Fred
